RECIPE TO MAKE PLUM PRESERVES
1. PREPARE THE WILD PLUMS. (WASH, DE-STEM & PITT) PITTING USING A KNIFE TO CUT THE PLUM IN HALF WILL CUT DOWN ON WORK. PLUMS CAN BE PROCESSED FURTHER INTO SMALLER PIECES IF YOU PREFER.
2. ADD SUGAR AND HEAT SLOWLY UNTIL BOILING. TO PREVENT BURNING, PRESERVES SHOULD CONTINUALLY BE STIRRED. BOIL FOR ABOUT 5 MINUTES. A CUP OF PLUMS TO A CUP OF SUGAR MAKES A NICE TART PRESERVE. ADD PECTIN IF YOU LIKE A THICK PRODUCT.
3. FILL JARS FULL AND PUT ON LIDS QUICKLY WHILE HOT SO THAT JARS WILL BE STERILIZED.
4. ENJOY! IT IS A LOT OF WORK BUT WELL WORTH THE EFFORT.
